BAS- OY (Vegetable Soup of Sana)


Bahay kubo kahit munti ang halaman doon ay sarisari. The lyrics of the song bahay kubo is describing how abundant our life in the province even we lived in the small houses. This recipe is very popular in Mindanao and other part of Visayas region in the Philippines. Bas-oy or Vegetable soup is the easiest food that we can cook here in the province because it is already available in our front or backyard gardens. Vegetables are one of the best source of vitamins and minerals.


The ingredients for this easy homemade vegetable soup or what we called bas-oy are the following: •Malunggay leaves

•squash

•Okra

•Eggplant

•Lemon grass

• Iodized Salt or Maggi Magic Sarap\ Chicken cubes


The process in making bas-oy is very easy.

1. In a large cooking pot put the squash, okra and eggplant. Let it boil for a minute.

2. When it is boiled completely put the malunggay leaves and lemon grass.

3. Add the Iodized salt, not too much just little. Too much salt can cause disease. You can use chicken cubes or other seasonings but I only used salt for seasoning, the sweetness of the veggies will balance the taste.

4. Re boil it and then cook for 3 - 4 minutes. It is important not to overcook the veggies. You can turn off the heat if you think that they are already cooked

5. Transfer in a large serving bowls.

Deciding on the vegetables that you will use is entirely up to yourself. Health is wealth "Pangalagaan ang sarili upang buhay ay bumuti". It is important to monitor our physical well being and promote good health by exercising and eating healthy foods.

I grew up in the province of Bukidnon. Away from traffic, noisy and polluted city. In the place where neighbors shared each others food, where people help each other in times of needs, In times of calamity we are comfortable because we know we are on the safest area, where we don't need aircon because the air is always fresh and very cold at night, where we always have a green view, when we need vegetables or fruits we can ask from our neighbors or just simply pick in our own garden. Living in a place when you can hear only the sounds of animals, you can inhale fresh air, you can eat fresh fruits and vegetables and when night comes you can sleep well in silence. Bukidnon is my home and there is no other place can compare and replace this in my heart.
